Terroir: The region has a transitional continental climate with cool, dry summers and warm winters. A characteristic natural phenomenon of the area is the "Vecherik" – a gentle breeze that appears in the evening and stops before noon, caused by the different heating rates of the air between the plains and the mountainous areas. The "Vecherik" is an excellent regulator of alcoholic fermentation and favors the formation of aromatic substances in the grapes. The soils are sandy-clayey and clay-limestone.
Vinification Technology and Method: The cooled grapes pass through a vibrating table for manual selection of the clusters. The destemmed grapes are placed in a 2 cubic meter pneumatic press, where the berries are pressed whole up to a pressure of 1.2 Bar. Cold enzymatic clarification is followed by fermentation with pure culture wine yeasts at 13-15°C. The wine ages "sur lie" for 6 months. The batches are then blended, stabilized, filtered, and bottled.
Tasting Notes: The wine has a sparkling, delicate, pale pink color with quartz hues. It is fresh, elegant, and balanced. The taste has a soft attack, with a juicy yet firm body and a spicy citrus finish.
